This gesture finds its origins in the chicken coops of pre-industrial Welsh prisons. In these prisons, it was common to keep domesticated animals and plots of cultivated land to keep the prisoners working and productive.

Usually the food would be carted directly out of the work area to be either consumed by guards or sold at the market to further enrich the coffers of the wardens.

Habitually the child prisoners had free access to the coops for cleaning and feeding, while the adult prisoners were expected to gather the eggs and bring them to the prison guards. The children would therefore signal silently to the waiting men the size and quality of the eggs in each nest, so that the prisoners would know which ones to subtly pocket. Many prisoners had agreements with the prison cook, who would whip them up a tasty omelet for an exorbitant price. This often meant the prisoners would need to pocket 5 or 6 eggs for each single egg omelet. The prison cooks, usually Gallic in origin, had extremely discerning tastes regarding eggs and would only accept the best one as payment,

This meant the children cleaning the coops became experts at grading egg quality, and would signal these grades accordingly. The joining of the tip of the thumb and forefinger in the gesture is a visual reference to the shape of the egg, while the remaining fingers acted as a grading system of 1 to 3; 3 fingers indicating the biggest and choicest eggs, while 1 indicated the smaller eggs that the Gallic cooks would never accept. (incidentally, the gesture indicating 1 later morphed into a widely used gesture for contempt, literally meaning ; ‘You merit only the puniest, smallest egg!’.
